Ingredients:
1 Heaping 1/2 cup measure of Quaker Oats
3 Tbsp sugar
2 tsp salt
4 cups bread flour
1/2 cup rye flour
1/2 cup whole wheat flour
3 Tbsp oil
2 Cups water
5 tsp active dry yeast
1 tsp each of dried minced onion, dried minced garlic, dill weed, and poppy seeds

1/2 tsp each of dried minced onion, dried minced garlic, dill weed, poppy seeds & coarse ground salt
…Preparation…
Take a 1/3 cup of the water and warm it slightly in the microwave until it is barely lukewarm... Mix it with the yeast until it is smooth... set aside...
Measure and grind the oats in a coffee grinder to a fine flour...
Measure the remainder of the dry ingredients and mix together with the oats in a large bowl...
Add the yeast mixture and the remainder of the water to the dry ingredients...
Stir until the water has absorbed and stirring is difficult, then turn the mixture out onto a lightly floured surface...
Knead the dough for about 10 minutes or until all the ingredients are mixed and the texture is consistent...
Lightly spray the inside of a plastic bowl with olive oil...
Place the dough ball in the bowl and cover the dough with a lightly oiled sheet of plastic wrap...
Cover the bowl with a dark cloth and place the bowl in a warm place for the dough to rise...
Allow the dough to rise until it has doubled in size which should be about 45 minutes...
Measure and mix the toppings ingredients and remove the egg from fridge to start warming to room temperature.

Warm the oven to 350° F...
Turn the dough out onto a lightly floured surface and separate into two even pieces...
Form each piece into loaves and place in 4" x 8" loaf pans that have been lightly sprayed with olive oil...
Beat the egg and brush onto entire top of both loaves...
Sprinkle the toppings evenly over the egg wash...
Place both pans onto the oven's middle rack and bake for 30 minutes...
When done... turn the loaves out onto cooling racks...
