Lemon - Poppy Seed Bread

 

Ingredients:
1 cup of softened butter
2 cups of sugar
1/4 cup of poppy seeds
4 eggs
3 cups of all-purpose flour
2 teaspoons of baking powder
1/2 teaspoon of salt
The zest from one lemon
1/2 cup milk
1/2 fresh lemon juice


Sauce:
2/3 cup of sugar
1/2 cup of fresh lemon juice

Make lemon sauce by stirring sugar into lemon juice and warming over low heat until sugar is dissolved. Set aside.


…Preparation…

·        Preheat oven to 350 degrees and Grease 5 mini loaf pans…

·        Cream butter and sugar in a mixer…

·        Add eggs one at a time, beating after each addition…

·        Add poppy seeds…

·        Sift flour, baking powder and salt together.

·        In a blender, put milk, lemon juice, and lemon zest to grind..

·        Add flour mixture to batter alternately with milk and mixture, beginning and ending with flour mixture…

·        Divide batter into pans. Bake for 35 minutes or until a tester comes out clean…

·        Pour lemon sauce over hot loafs.

·        Allow the loaves to cool for 10 minutes…

·        Then turn out on rack to cool completely.
