...First, the trip to the grocery store... for the vegetables and meat...


...George, the recipes below are just a guide and can be changed as you see fit...
The Chimichurri Sauce is almost a relish and is very flavorful... and as spicy as you want by adjusting the peppers... It could also marinate the steaks, but I use it as a steak sauce at the table...
The grilling sauce adds all the needed seasonings to the meat during cooking and keeps the steaks very moist...
…Chimichurri Sauce…
2
T minced shallot
3 minced
medium garlic cloves
1 t freshly ground salt
1/2 t freshly ground pepper
1 minced medium jalapeño pepper
without seeds
3 T red wine vinegar
2 juice from (2) limes
1 c lightly packed chopped fresh flat leaf parsley
¼
c lightly chopped fresh oregano leaves
3/4 c olive oil
Add shallot, garlic, jalapeño, salt & pepper, and vinegar in a food processor equipped with the chopping blade and combine with a few brief low speed pulses… then let sit for a few minutes to combine the flavors…
Remove the lid and add the herbs... replace the lid and drizzle in the oil while running the processor on low until the mixture is finely chopped (not puréed)…
Place in a small bowl and cover the surface of the sauce with plastic wrap and refrigerate…

1T cayenne pepper
3T salt
1c hot water
Dissolve the cayenne pepper and salt in the hot water until completely dissolved…
Transfer to a squeeze bottle…
